Ingredients

  • 350 g Pasta (spaghetti or penne)
  • 240 g Canned tuna in olive oil (drained)
  • 150 g Fresh spinach leaves
  • 3 units Garlic cloves
  • 3 tbsp Extra virgin olive oil
  • 0.5 tsp Red pepper flakes
  • 1 unit Lemon (zested and juiced)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 30 g Parmesan cheese (optional, grated)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Peel and finely chop the garlic cloves. Add the garlic to the olive oil and sauté for 1-2 minutes until fragrant, but not browned.

Stir in the red pepper flakes and cook for an additional 30 seconds to release their flavor.
