  • 400 grams Pasta (spaghetti or penne)
  • 2 cans Canned tuna in olive oil
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 1 teaspoon Red chili flakes
  • 250 grams Cherry tomatoes
  • 2 tablespoons Capers
  • 2 tablespoons Parsley (fresh, chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 50 grams Grated Parmesan (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Peel and finely chop the garlic cloves. Add the garlic to the skillet along with the red chili flakes, and sauté for 1 minute until fragrant.

Step 4

Halve the cherry tomatoes and add them to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Drain the canned tuna and add it to the skillet, breaking it into smaller pieces with a wooden spoon. Stir to combine.

Stir in the capers, salt, and black pepper. Cook for 2-3 minutes to allow the flavors to meld together.

Add the cooked pasta to the skillet along with 1/2 cup of the reserved pasta water. Toss everything together until the pasta is well coated in the sauce. Add more pasta water as needed to achieve the desired consistency.
