Ingredients

  • 12 oz spaghetti or linguine
  • 4 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 cups cherry or grape tomatoes, halved
  • 2 tbsp capers, drained and rinsed
  • 1 cup kalamata olives, pitted and sliced
  • 0.5 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped
  • 0.75 cup panko breadcrumbs
  • 0.5 cup grated Parmesan cheese (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water before draining.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the breadcrumbs and toast them, stirring frequently, for 3-4 minutes until golden brown. Transfer to a small bowl and set aside.

Step 3

In the same skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1 minute until fragrant.

Step 4

Stir in the halved cherry or grape tomatoes and cook for 4-5 minutes, stirring occasionally, until they soften and start to release their juices.

Step 5

Add the capers and sliced olives to the skillet. Stir to combine, and cook for 2-3 more minutes.

Step 6

Add the cooked pasta to the skillet, tossing to coat it in the tomato mixture. If the sauce seems dry, stir in a few tablespoons of the reserved pasta water until you reach your desired consistency.

Step 7

Season the pasta with salt and black pepper to taste. Sprinkle the freshly chopped parsley over the dish and toss again.

Step 8

Divide the pasta among serving plates and sprinkle each portion with the toasted breadcrumbs. Add grated Parmesan cheese if desired.
