Ingredients

  • 12 oz Pasta
  • 3 cups Broccoli florets
  • 2 cups Cherry tomatoes
  • 2 tablespoons Olive oil
  • 3 units Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 cup Grated Parmesan cheese
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Fresh basil leaves (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.

Step 2

While the pasta is cooking, steam the broccoli florets in a separate pot or microwave until tender but still bright green (about 5-7 minutes). Set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes begin to break down and form a sauce.

Remove the skillet from heat and sprinkle the shredded mozzarella cheese over the top. Cover the skillet for 2-3 minutes to allow the cheese to melt.
