Ingredients

  • 400 grams Pasta (spaghetti, linguine, or penne)
  • 3 tablespoons Extra virgin olive oil
  • 3 cloves Garlic, minced
  • 500 grams Cherry tomatoes, halved
  • 100 grams Black olives, pitted and sliced
  • 2 tablespoons Capers, rinsed and drained
  • 0.5 teaspoons Red chili flakes (optional)
  • 15 grams Fresh basil leaves, torn
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 3

Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.

Step 4

Stir in the sliced black olives, capers, and red chili flakes (if using). Cook for another 2 minutes, allowing the flavors to meld.

Step 5

Reduce the heat to low and add the cooked pasta to the skillet. Toss to coat the pasta in the tomato olive sauce. If the mixture seems dry, gradually add the reserved pasta water, 1 tablespoon at a time, until the desired consistency is reached.

Season the pasta with salt and freshly ground black pepper to taste. Remove the skillet from heat and gently stir in the torn basil leaves.
