Ingredients

  • 12 oz Pasta (penne, fusilli, or spaghetti)
  • 2 tbsp Olive oil
  • 3 Garlic cloves (minced)
  • 2 cups Cherry tomatoes (halved)
  • 4 cups Fresh spinach leaves
  • 1 cup Mozzarella cheese (fresh, cubed or shredded)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 2 tbsp Fresh basil leaves (chopped, for garnish)
  • 0.5 cup Grated Parmesan cheese (for serving)

Directions

Step 1

Bring a large pot of salted water to boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.

Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.

Stir in the fresh spinach leaves and cook for 2-3 minutes, or until the spinach is wilted.

Season the mixture with salt, black pepper, and optional red pepper flakes. Stir to combine.
