Ingredients

  • 400 grams pasta (spaghetti, fusilli, or penne)
  • 250 grams cherry tomatoes
  • 100 grams basil pesto (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 pieces garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 50 grams grated Parmesan cheese (optional)
  • 5 pieces fresh basil leaves (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, but do not let them brown.

Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they soften and start to release their juices.

Step 5

Reduce the heat to low and stir in the basil pesto. Mix well to combine with the tomatoes.

Add the cooked pasta to the skillet and toss to coat in the tomato-pesto mixture. If the sauce is too thick, add a little bit of the reserved pasta cooking water, 2 tablespoons at a time, until the desired consistency is reached.

Season with salt and black pepper to taste.
