Ingredients

  • 300 g spaghetti or penne pasta
  • 2 tbsp olive oil
  • 2 pieces garlic cloves, minced
  • 1 small yellow onion, finely chopped
  • 400 g canned diced tomatoes
  • 200 g frozen peas
  • 1 tsp dried oregano
  • 0.5 tsp red chili flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 10 g fresh basil leaves, chopped
  • 50 g grated Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and reserve 1/2 cup of the cooking water.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and chopped onion to the skillet. Sauté for 3-4 minutes, or until the onion becomes translucent and fragrant.

Step 4

Pour in the canned diced tomatoes along with their juices. Stir in the dried oregano, red chili flakes, salt, and black pepper. Simmer for 10 minutes to allow the flavors to meld.

Step 5

Add the frozen peas to the tomato sauce and cook for another 5 minutes, stirring occasionally.

If the sauce is too thick, stir in a few tablespoons of the reserved pasta cooking water to reach the desired consistency.
