Ingredients

  • 400 grams Pasta (such as penne or spaghetti)
  • 250 grams Cherry tomatoes
  • 200 grams Fresh mozzarella
  • 2 Garlic cloves
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 Fresh basil leaves
  • 50 grams Parmesan cheese (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water before draining the pasta.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Peel and mince the garlic cloves, then add them to the skillet. Cook for 1 to 2 minutes until fragrant, being careful not to burn them.

Step 4

Halve the cherry tomatoes and add them to the skillet. Cook for about 5 to 7 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Step 5

Season the tomatoes with salt and black pepper, and stir well.

Step 6

Drain the fresh mozzarella and tear it into bite-sized pieces.

Step 7

Add the drained pasta to the skillet with the tomatoes. Toss to combine, adding a splash of the reserved pasta cooking water if the mixture seems dry.

Step 8

Turn off the heat and fold in the mozzarella pieces, allowing them to soften slightly from the residual heat.

Step 9

Tear the fresh basil leaves into small pieces and sprinkle them over the pasta.

Step 10

Serve immediately, with freshly grated Parmesan cheese on top if desired.
