  • 0.5 cup Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water before draining.

While the pasta cooks, heat a large skillet over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the cooked bacon to a plate lined with paper towels. Leave about 1 tablespoon of bacon grease in the skillet; if there’s excess grease, remove it.

Add the olive oil to the skillet with the bacon grease and warm over medium heat. Add the minced garlic and cook for 1 minute, stirring frequently, until fragrant.
