Ingredients

  • 12 oz Pasta (such as spaghetti, linguine, or penne)
  • 1 cup Sun-dried tomatoes (packed in oil)
  • 2 cups Cherry tomatoes, halved
  • 0.5 cup Pitted Kalamata olives, sliced
  • 4 oz Crumbled goat cheese
  • 0.25 cup Fresh basil leaves, chopped
  • 3 cloves Garlic, minced
  • 3 tbsp Olive oil
  • 0.5 tsp Red pepper flakes
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

Step 2

While the pasta cooks, heat olive oil in a large skillet over medium heat.

Add the minced garlic and red pepper flakes to the skillet, sautéing for 1-2 minutes until fragrant.

Add the sun-dried tomatoes (drained and chopped, if needed) and cherry tomato halves to the skillet. Cook for 5-6 minutes, stirring occasionally, until the cherry tomatoes start to soften and release their juices.
