Ingredients

  • 400 grams Spaghetti (or your preferred pasta)
  • 300 grams Fresh spinach
  • 50 grams Pine nuts
  • 3 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 50 grams Parmesan cheese, grated
  • 1 teaspoon Lemon zest
  • 0 to taste Salt
  • 0 to taste Black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.

Step 2

While the pasta is cooking, toast the pine nuts in a dry skillet over medium heat. Stir frequently until golden and fragrant, about 3-4 minutes. Remove from heat and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned.
