Ingredients

  • 12 oz pasta (penne or rigatoni)
  • 2 tbsp olive oil
  • 8 oz spicy Italian sausage, casing removed
  • 3 cloves garlic, minced
  • 1 tsp red chili flakes
  • 1.5 cups heavy cream
  • 0.75 cups Parmesan cheese, grated
  • 2 tbsp parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper, freshly ground

Directions

Step 1

Bring a large pot of generously salted water to boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet or sauté pan, heat the olive oil over medium heat.

Step 3

Add the spicy Italian sausage to the pan, breaking it up with a wooden spoon as it cooks. Cook for 5-7 minutes, or until the sausage is browned and fully cooked. Remove any excess grease from the pan if necessary.

Step 4

Reduce the heat to medium-low and add the minced garlic and red chili flakes. Sauté for 1 minute, stirring constantly, until fragrant.

Step 5

Pour in the heavy cream and stir well to combine with the sausage. Simmer the sauce for 4-5 minutes, or until slightly thickened.

Add the grated Parmesan cheese to the sauce and stir until melted and incorporated. If the sauce is too thick, add a splash of the reserved pasta cooking water to loosen it.
