Ingredients

  • 300 grams Pasta (e.g., fettuccine or linguine)
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 0.5 cup White wine
  • 1 cup Heavy cream
  • 150 grams Smoked salmon, chopped
  • 2 tablespoons Fresh chives, finely chopped
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/3 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

Meanwhile, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and slightly golden, being careful not to burn it.

Step 3

Pour the white wine into the skillet, stirring to deglaze the pan. Allow the wine to simmer for 2-3 minutes to reduce slightly.

Step 4

Lower the heat and stir in the heavy cream. Allow the mixture to simmer gently for 3-4 minutes, stirring occasionally, until it thickens slightly.

Step 5

Add the chopped smoked salmon, lemon zest, salt, and black pepper to the skillet. Stir well and cook for 1-2 minutes to warm the salmon through.

Step 6

Add the cooked pasta to the sauce, tossing to coat evenly. If needed, add a splash of the reserved pasta cooking water to loosen the sauce.

Step 7

Stir in the chopped chives and mix gently. Taste and adjust the seasoning with additional salt and pepper, if desired.

Step 8

Serve the pasta hot, garnished with extra chives and a sprinkle of grated Parmesan cheese, if using. Enjoy!
