Ingredients

  • 12 ounces spaghetti (or pasta of choice)
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 4 None garlic cloves, minced
  • 14 ounces crushed tomatoes (canned)
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 0.5 teaspoons red pepper flakes (optional, for heat)
  • 0.25 cup fresh basil, chopped (plus more for garnish)
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 4 quarts water
  • 1 tablespoon salt (for pasta water)

Directions

Step 1

Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt to the boiling water and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set the pasta aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp in a single layer, season with a pinch of salt and pepper, and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add 2 tablespoons of butter. Once melted, add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.

Step 4

Pour in the crushed tomatoes and stir to combine. Cook for 5 minutes, allowing the sauce to simmer gently. Season with 1 teaspoon of salt, 0.5 teaspoons of black pepper, and red pepper flakes (if using).

Step 5

Reduce the heat to low and stir in the heavy cream. Cook for 2 minutes until the sauce is slightly thickened. Taste and adjust seasoning if needed.

Step 6

Return the cooked shrimp to the skillet along with the chopped basil. Toss to combine and heat through for 1-2 minutes.

Step 7

Add the drained pasta directly into the sauce. Toss well to coat. If the sauce is too thick, add a little of the reserved pasta water, 1 tablespoon at a time, until the desired consistency is reached.

Step 8

Sprinkle the grated parmesan cheese over the pasta and toss again. Serve hot, garnished with additional fresh basil and more parmesan if desired.
