  • 12 oz spaghetti
  • 1 lb large shrimp, peeled and deveined

  • 0.5 cup fresh orange juice
  • 1 tsp orange zest
  • 0.5 cup heavy cream
  • 0.333 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the shrimp with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook the shrimp for 2-3 minutes on each side, or until pink and opaque. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter is melted, add the sliced jalapeno and cook for 1-2 minutes until slightly softened.

If the sauce is too thick, add the reserved pasta water a little at a time until the desired consistency is reached.
