Ingredients

  • 12 ounces spaghetti
  • 1 pound large shrimp (peeled and deveined)
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 6 cloves garlic (minced)
  • 0.5 teaspoons crushed red pepper flakes
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley (chopped)
  • 0.5 cup grated Parmesan cheese (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp to the skillet, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, and cook for 2-3 minutes per side, or until the shrimp turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, reduce heat to medium and add the remaining 1 tablespoon of olive oil and the butter. Once the butter is melted, add the minced garlic and crushed red pepper flakes. Sauté for 1-2 minutes, stirring frequently, until the garlic is fragrant but not browned.

Stir in the lemon juice, lemon zest, and 1/4 cup of the reserved pasta water. Simmer for 1 minute to combine the flavors.

Return the cooked shrimp to the skillet, along with the cooked spaghetti. Toss everything together to coat the pasta and shrimp evenly in the garlic sauce. Add more pasta water as needed to create a silky sauce.

Step 6

Remove the skillet from heat and stir in the fresh parsley. Taste and adjust seasoning with additional salt and black pepper, if needed.

Step 7

Serve immediately, garnished with grated Parmesan cheese if desired.
