Ingredients

  • 12 oz spaghetti
  • 1 lb shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic (minced)
  • 1 tsp lemon zest
  • 2 tbsp lemon juice (freshly squeezed)
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup parmesan cheese (grated, for garnish)
  • 2 tbsp parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to boil and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Add the shrimp to the skillet, season with salt and black pepper, and cook for 2-3 minutes per side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the butter and minced garlic. Cook for about 1 minute, or until fragrant.

Add the asparagus pieces to the skillet and sauté for 4-5 minutes, until tender but still slightly crisp.

Step 6

Stir in the lemon zest, lemon juice, and red pepper flakes. Cook for another 1 minute.
