Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
Peel and finely dice the carrots and onion. Mince the garlic cloves.
Heat the olive oil in a large skillet over medium heat. Add the sausagemeat and cook, breaking it into small pieces with a wooden spoon, until browned and cooked through (about 5-7 minutes). Remove the cooked sausagemeat from the skillet and set aside.
