Ingredients

  • 12 oz Penne pasta
  • 12 oz Italian sausage (mild or spicy, casings removed)
  • 8 cups Swiss chard (stems removed, leaves roughly chopped)
  • 2 tbsp Olive oil
  • 3 Garlic cloves (minced)
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 0.5 cup Chicken broth (low-sodium)
  • 0.5 cup Parmesan cheese (grated, plus extra for serving)
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Bring a large pot of salted water to boil. Add the penne pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 6–8 minutes. Transfer the cooked sausage to a plate and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook until fragrant, about 1 minute. If using, stir in the crushed red pepper flakes.

Step 4

Add the Swiss chard to the skillet, cooking until wilted, about 3–4 minutes. Season with a pinch of salt and black pepper.

Step 5

Return the cooked sausage to the skillet, then pour in the chicken broth. Stir to combine and let it simmer for 2 minutes.

Step 6

Add the cooked pasta to the skillet, tossing to coat evenly in the sauce. If the mixture is too dry, add some of the reserved pasta water, a little at a time, until the desired consistency is reached.

Step 7

Stir in the grated Parmesan cheese and adjust seasoning with salt and pepper, if needed.

Step 8

Serve the pasta warm, topped with additional Parmesan cheese. Enjoy!
