Ingredients

  • 400 g Pasta (e.g., fettuccine or linguine)
  • 300 g Fresh salmon fillet
  • 200 ml Heavy cream
  • 2 tbsp Unsalted butter
  • 2 pcs Garlic cloves
  • 100 ml White wine (optional)
  • 3 tbsp Fresh dill
  • 1 tsp Lemon zest
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 50 g Grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

Cut the fresh salmon fillet into bite-sized pieces, ensuring any bones are removed. Pat them dry with a paper towel and season with a pinch of salt and pepper.

Step 3

Heat the olive oil and one tablespoon of butter in a large skillet over medium heat. Add the salmon pieces and cook for about 2-3 minutes on each side until just cooked through. Remove the salmon from the skillet and set aside.

Step 4

Melt the remaining tablespoon of butter in the same skillet. Finely mince the garlic cloves and sauté them in the butter until fragrant, about 1 minute.

Step 5

Deglaze the skillet with the white wine (if using) and let it simmer for 2 minutes to reduce slightly.

Step 6

Stir in the heavy cream and bring the sauce to a gentle simmer. Add lemon zest, chopped fresh dill, and season with salt and black pepper to taste.

Step 7

Return the cooked salmon to the skillet, gently stirring it into the sauce. Simmer for another 2-3 minutes to allow the flavors to meld.

Step 8

Add the drained pasta to the skillet and toss to coat it well in the salmon sauce. Use the reserved pasta cooking water to thin the sauce if needed.

Step 9

Serve immediately, garnished with additional dill and Parmesan cheese, if desired. Enjoy!
