Ingredients

  • 300 grams Pasta (e.g., penne or fettuccine)
  • 250 grams Salmon fillet (skinless)
  • 150 grams Mascarpone cheese
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves (minced)
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh dill (chopped)
  • 30 grams Parmesan cheese (grated)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 3 liters Water (for boiling pasta)
  • 1 tablespoon Salt (for pasta water)

Directions

Step 1

Bring a large pot of water to a boil. Add 1 tablespoon of salt and cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining, and set the pasta aside.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add 2 tablespoons of olive oil.

Season the salmon fillet with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Place the salmon in the skillet and cook for 3-4 minutes on each side, or until fully cooked and flaky. Remove the salmon from the skillet and set aside to cool slightly.

In the same skillet, lower the heat and add the minced garlic. Sauté for 1 minute until fragrant but not browned.

Add the mascarpone cheese to the skillet, stirring gently until melted and creamy.
