Ingredients

  • 12 oz spaghetti
  • 2 cups cherry tomatoes
  • 6 whole garlic cloves
  • 4 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 0.5 cup fresh basil leaves
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Rinse the cherry tomatoes and place them on a baking sheet. Peel the garlic cloves and add them whole to the baking sheet.

Step 3

Drizzle 3 tablespoons of olive oil over the tomatoes and garlic. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Toss everything to coat evenly.

Step 4

Roast the tomatoes and garlic in the oven for 20 minutes, or until the tomatoes are blistered and the garlic is soft.

Step 5

While the tomatoes and garlic are roasting, bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the spaghetti.

Step 6

Remove the roasted garlic from the baking sheet and mash it into a paste using a fork. Toss the roasted cherry tomatoes, mashed garlic, and the remaining 1 tablespoon of olive oil with the cooked spaghetti.

Step 7

If the pasta appears too dry, add a splash of the reserved pasta water and toss again until the sauce is silky.

Step 8

Adjust seasoning with additional salt, black pepper, and red pepper flakes (if using).

Step 9

Garnish the pasta with fresh basil leaves and grated Parmesan cheese before serving.

Step 10

Serve immediately and enjoy!
