Preheat your oven to 200°C (400°F).
Separate the cloves of the garlic head but leave them unpeeled. Place them on a baking sheet along with the cherry tomatoes.
Drizzle 2 tablespoons of olive oil over the garlic and cherry tomatoes. Sprinkle with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper. Toss to coat.
Roast the garlic and cherry tomatoes in the preheated oven for 25 minutes, or until the tomatoes are soft and lightly blistered, and the garlic is golden and fragrant.
While the vegetables are roasting, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water and set aside, then drain the pasta.
Once the garlic has cooled slightly, squeeze the cloves to extract the roasted garlic paste.
In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the roasted garlic paste and stir, cooking for 1 minute.
Toss the roasted cherry tomatoes into the skillet, lightly pressing on a few tomatoes with a spoon to release their juices. Add the red chili flakes if using.
Add the cooked pasta to the skillet and toss to combine. If the pasta looks dry, add reserved pasta water a few tablespoons at a time until desired consistency is achieved.
Tear the fresh basil leaves and sprinkle them over the pasta. Season with additional salt and black pepper to taste.
Serve hot, topped with grated parmesan cheese if desired.
