Ingredients

  • 400 grams spaghetti (or pasta of choice)
  • 500 grams cherry tomatoes
  • 1 head garlic
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red chili flakes (optional)
  • 10 leaves fresh basil leaves
  • 50 grams parmesan cheese, grated (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Separate the cloves of the garlic head but leave them unpeeled. Place them on a baking sheet along with the cherry tomatoes.

Step 3

Drizzle 2 tablespoons of olive oil over the garlic and cherry tomatoes. Sprinkle with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper. Toss to coat.

Step 4

Roast the garlic and cherry tomatoes in the preheated oven for 25 minutes, or until the tomatoes are soft and lightly blistered, and the garlic is golden and fragrant.

While the vegetables are roasting, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water and set aside, then drain the pasta.

Once the garlic has cooled slightly, squeeze the cloves to extract the roasted garlic paste.

In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the roasted garlic paste and stir, cooking for 1 minute.

Tear the fresh basil leaves and sprinkle them over the pasta. Season with additional salt and black pepper to taste.
