Ingredients

  • 12 oz pasta (penne, fusilli, or spaghetti)
  • 1 cup frozen shelled edamame
  • 1 cup ricotta cheese
  • 2 tbsp olive oil
  • 2 garlic clove
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 0.5 cup reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

While the pasta cooks, steam the edamame according to package instructions. Set aside.

In a large skillet, heat the olive oil over medium heat. Mince the garlic and sauté it in the olive oil for 1-2 minutes until fragrant but not browned.

In a mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, 1/2 cup parmesan cheese, salt, and black pepper. Stir until smooth.
