  • 2 pieces (6 oz each) Salmon fillet
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 12 ounces Pasta (spaghetti, penne, or your choice)
  • 3 pieces Garlic cloves, minced
  • 0.25 teaspoon Crushed red pepper flakes
  • 1 can (14 oz) Canned diced tomatoes
  • 1 tablespoon Tomato paste
  • 0.25 cup Heavy cream
  • 0.25 cup Fresh basil leaves, chopped
  • 0.5 cup Parmesan cheese, grated
  • 1 cup (pasta cooking water) Water

Directions

Step 1

Season the salmon fillets with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper on each side.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Place the salmon fillets skin-side down in the skillet and cook for 4-6 minutes per side, or until cooked through and flakes easily with a fork. Remove from the skillet and set aside.

Cook the pasta according to package instructions in salted water until al dente. Reserve 1 cup of pasta cooking water before draining and set aside.

In the same skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and crushed red pepper flakes and sauté for 1-2 minutes, or until fragrant.

Stir in the canned diced tomatoes, tomato paste, and 0.5 teaspoon of salt. Bring to a simmer and let cook for 8-10 minutes, stirring occasionally, to allow the flavors to meld.

Reduce the heat to low and stir in the heavy cream. Allow it to simmer for another 2 minutes until the sauce thickens slightly.

Add the cooked pasta to the skillet along with the reserved pasta cooking water. Toss to combine the pasta with the sauce. Let it cook for 1-2 minutes until the sauce clings to the pasta.

Flake the cooked salmon into large chunks and gently fold it into the pasta and sauce mixture, being careful not to break the pieces too much.

Remove the skillet from heat and top the pasta with chopped basil and grated Parmesan cheese. Toss gently to combine, reserving some basil and cheese for garnish.
