Ingredients

  • 400 grams spaghetti or linguine
  • 4 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 400 grams canned diced tomatoes
  • 150 milliliters dry white wine
  • 200 milliliters vegetable or fish stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoons red chili flakes (optional)
  • 500 grams mussels, cleaned and debearded
  • 300 grams peeled, deveined shrimp
  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil leaves, torn
  • 1 unit lemon, zested and juiced
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water and drain the rest. Set the pasta aside.

Step 2

In a large, deep skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and sauté for 1 minute, being careful not to burn it.

Step 4

Add the diced tomatoes, white wine, and vegetable or fish stock to the skillet. Stir well to combine.

Step 5

Mix in the dried thyme, oregano, and red chili flakes (if using). Season with a pinch of salt and black pepper.

Step 6

Bring the sauce to a simmer and let it cook for 10 minutes, allowing the flavors to meld.

Step 7

Add the cleaned mussels to the pan. Cover with a lid and cook for 3-5 minutes, until the mussels open. Discard any that do not open.

Step 8

Stir in the shrimp and cook for another 3-4 minutes, or until the shrimp turn pink and are cooked through.

Step 9

Taste the sauce and adjust the seasoning, adding more salt or pepper if needed.

Step 10

Add the cooked pasta to the skillet, tossing gently to coat it in the seafood sauce. If needed, add a splash of the reserved pasta water to loosen the sauce.

Step 11

Turn off the heat and stir in the chopped parsley, torn basil leaves, lemon zest, and lemon juice.

Step 12

Serve immediately, garnished with additional parsley or basil if desired. Pair with crusty bread to soak up the sauce and enjoy!
