Ingredients

  • 250 grams pasta (short shape, such as penne or rigatoni)
  • 300 grams potatoes (peeled and cubed)
  • 2 tablespoons olive oil
  • 1 medium yellow onion (finely chopped)
  • 2 cloves garlic cloves (minced)
  • 500 ml vegetable broth
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon fresh rosemary (finely chopped)
  • 1 teaspoon fresh thyme (leaves only)
  • 50 grams Parmesan cheese (grated, optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 5 minutes.

Step 2

Add the pasta to the pot with the potatoes and cook according to the pasta package instructions until the pasta is al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and potatoes and set aside.

Step 3

Heat olive oil in a large pan over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Add the minced garlic to the pan and cook for 1 minute, stirring frequently to prevent burning.

Step 5

Pour in the vegetable broth and bring to a gentle simmer. Add the fresh rosemary and thyme, and season with salt and black pepper.

Add the cooked pasta and potatoes to the pan and toss to coat in the sauce. Add a splash of the reserved pasta cooking water if the mixture seems dry.
