Ingredients

  • 400 grams spaghetti or preferred pasta
  • 2 cups fresh basil leaves
  • 0.25 cup pine nuts
  • 2 units garlic cloves
  • 0.5 cup extra virgin olive oil
  • 0.5 cup Parmesan cheese (grated)
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 liters water (for boiling pasta)
  • 2 tablespoons salt (for boiling pasta)

Directions

Step 1

Fill a large pot with water, add 2 tablespoons of salt, and bring it to a boil.

Step 2

Once the water is boiling, add the spaghetti or preferred pasta and cook according to the package instructions until al dente.

While the pasta cooks, prepare the pesto. In a food processor, combine the fresh basil leaves, pine nuts, garlic cloves, and a teaspoon of salt. Pulse until the ingredients are coarsely blended.

With the processor running, slowly drizzle in the extra virgin olive oil until the mixture is smooth. Stop to scrape down the sides if necessary.
