  • 400 grams pasta
  • 250 grams frozen peas
  • 4 tablespoons olive oil
  • 1 medium onion, finely diced
  • 2 pieces garlic cloves, minced
  • 500 milliliters vegetable broth
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Begin by bringing a large pot of salted water to a boil over high heat.

Step 2

Once the water is boiling, add the pasta and cook according to package instructions, usually about 10-12 minutes, until al dente. Reserve 1 cup of pasta water and drain the rest.

Step 3

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 4

Add the onion and cook for about 3-4 minutes until it becomes translucent.

Add the minced garlic to the skillet and sauté for another 1 minute until fragrant.

Pour in the vegetable broth and bring to a simmer.
