Ingredients

  • 400 grams Pasta (penne, rigatoni, or fettuccine)
  • 150 grams Pancetta, diced
  • 200 grams Gorgonzola cheese, crumbled
  • 200 milliliters Heavy cream
  • 2 tablespoons Butter
  • 2 cloves Garlic, finely minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Step 2

In a large skillet over medium heat, add the diced pancetta. Cook for 5-7 minutes, stirring occasionally, until the pancetta is crispy and golden. Remove the pancetta with a slotted spoon and set it aside on a plate lined with paper towels.

Remove excess fat from the skillet, leaving about 1 tablespoon. Add 2 tablespoons of butter and the minced garlic to the skillet. Sauté the garlic for about 30 seconds, or until fragrant.
