Ingredients

  • 12 oz Pasta (such as spaghetti or linguine)
  • 3 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 8 oz Button mushrooms, sliced
  • 1 cup Sun-dried tomatoes (packed in oil), chopped
  • 0.25 cup Pine nuts
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil, then cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.

Stir in the chopped sun-dried tomatoes and cook for an additional 2 minutes.

Step 6

In a small dry pan, toast the pine nuts over medium heat for 2-3 minutes until they are golden and aromatic. Set aside.

Add the drained pasta to the skillet with the mushrooms and sun-dried tomatoes. Pour in the reserved pasta water and the remaining tablespoon of olive oil, then toss everything together to coat the pasta evenly.

Season the pasta with salt and black pepper to taste.

Remove from heat and sprinkle the toasted pine nuts, grated Parmesan cheese, and chopped fresh parsley over the top. Gently toss to combine.
