Ingredients

  • 300 grams Pasta (spaghetti, fettuccine, or penne)
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 4 cloves Garlic cloves, minced
  • 250 grams Button mushrooms, sliced
  • 200 milliliters Heavy cream
  • 50 grams Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Chopped fresh parsley (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat the olive oil and butter over medium heat until melted.

Step 3

Add the minced garlic to the skillet and cook for 1-2 minutes, stirring, until fragrant.

Step 4

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring frequently, until they release their moisture and turn golden brown.

Step 5

Pour in the heavy cream and stir to combine. Let the mixture simmer on low heat for 3-4 minutes, allowing the flavors to meld.

Step 6

Stir in the grated Parmesan cheese, salt, and black pepper. Mix well until the cheese is melted and the sauce is smooth.

Step 7

Add the cooked pasta to the skillet and toss to coat evenly in the sauce. If needed, use the reserved pasta water to loosen the sauce to your desired consistency.

Step 8

Taste and adjust seasoning if necessary. Top with freshly chopped parsley, if desired.

Step 9

Serve immediately, garnished with additional Parmesan cheese if preferred.
