Ingredients

  • 400 g Pasta (such as fettuccine or linguine)
  • 200 g Mascarpone cheese
  • 10 leaves Fresh sage leaves
  • 2 tbsp Butter
  • 2 cloves Garlic
  • 50 g Freshly grated Parmesan cheese
  • 1 tsp Salt
  • 0.5 tsp Cracked black pepper
  • 1 cup Pasta cooking water
  • 1 tbsp Olive oil (for drizzling, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water before draining.

Step 2

While the pasta is cooking, prepare the sauce. Finely chop the garlic and thinly slice the sage leaves.

Step 3

In a large skillet over medium heat, melt the butter. Add the garlic and sage, and sauté for 2-3 minutes until the sage becomes fragrant and slightly crispy.

Step 4

Lower the heat to medium-low and stir in the mascarpone cheese. Allow it to melt gently, stirring frequently to create a smooth sauce. If the sauce seems too thick, add a bit of the reserved pasta cooking water, 1 tablespoon at a time, until it reaches your desired consistency.

Step 5

Add the grated Parmesan cheese to the sauce, stirring until well combined. Season with salt and cracked black pepper to taste.

Step 6

Add the cooked pasta to the skillet and toss to coat it evenly with the sauce. If needed, add more pasta water to help the sauce cling to the pasta.

Divide the pasta among plates or bowls. Drizzle with a little olive oil for added richness if desired and garnish with extra Parmesan and a few fresh sage leaves.
