Ingredients

  • 12 ounces Pasta (spaghetti, fettuccine, or your choice)
  • 2 medium Leeks (white and light green parts only, thinly sliced)
  • 8 ounces Mushrooms (cremini or button, sliced)
  • 3 cloves Garlic cloves (minced)
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 cup Dry white wine
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat the olive oil and butter in a large skillet over medium heat.

Step 3

Add the sliced leeks and cook for 5-6 minutes until softened, stirring occasionally to prevent them from browning.

Step 4

Stir in the mushrooms and cook for another 6-8 minutes until they release their moisture and turn golden brown.

Step 5

Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Step 6

Pour in the white wine, scraping the bottom of the skillet to deglaze any browned bits. Let it simmer for 2-3 minutes until reduced by half.

Step 7

Lower the heat to medium-low and stir in the heavy cream. Cook for 2-3 minutes, allowing the sauce to thicken slightly.

Step 8

Stir in the grated Parmesan cheese, salt, and black pepper. Mix until the cheese has melted and the sauce is smooth.

Step 9

Add the drained pasta to the skillet and toss to coat in the sauce. If needed, use the reserved pasta water a few tablespoons at a time to thin the sauce to your desired consistency.

Step 10

Taste and adjust seasoning if necessary.

Step 11

Serve immediately, garnishing with chopped fresh parsley and an extra sprinkle of Parmesan cheese.
