Ingredients

  • 12 oz Pasta (penne, fusilli, or your choice)
  • 8 oz Cooked ham (diced)
  • 2 cups Broccoli florets
  • 1 cup Carrots (sliced thinly)
  • 3 tbsp Unsalted butter
  • 3 tbsp All-purpose flour
  • 2 cups Milk (whole or 2%)
  • 2 cups Sharp cheddar cheese (shredded)
  • 0.5 cups Parmesan cheese (grated)
  • 0.5 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced ham, broccoli florets, and sliced carrots. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp. Set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
