Ingredients

  • 300 grams Penne pasta
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 Garlic cloves, minced
  • 200 grams Cooked ham, diced
  • 1 Apple, medium-sized, peeled, cored, and diced
  • 120 ml Dry cider
  • 100 ml Heavy cream
  • 50 grams Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, melt the butter with the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, but not browned.

Step 3

Add the diced ham and cook for 3-4 minutes until it begins to brown lightly.

Step 4

Stir in the diced apple and cook for an additional 2-3 minutes until the apple starts to soften slightly.

Step 5

Pour in the dry cider and allow it to simmer for 2-3 minutes, reducing slightly.

Step 6

Reduce the heat to low and stir in the heavy cream. Simmer gently for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.

Step 7

Add the Parmesan cheese, salt, and black pepper, stirring until the cheese melts and the sauce is smooth.

Step 8

Toss the cooked penne pasta into the sauce, ensuring it is evenly coated. If the sauce is too thick, add some reserved pasta water, 1 tablespoon at a time, until the desired consistency is achieved.

Step 9

Serve hot, garnished with fresh parsley if desired.
