Ingredients

  • 400 grams Spaghetti or linguine
  • 60 ml Olive oil
  • 4 Garlic cloves, thinly sliced
  • 0.5 teaspoons Red pepper flakes (optional)
  • 50 grams Panko bread crumbs
  • 2 tablespoons Fresh parsley, finely chopped
  • 30 grams Parmesan cheese, grated
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Fill a large pot with water, add a generous pinch of salt, and bring it to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.

Step 2

In a large skillet or sauté pan, heat 2 tablespoons of olive oil over medium heat. Add the panko bread crumbs and toast them, stirring frequently, until golden brown and crisp, about 3-4 minutes. Transfer the toasted bread crumbs to a bowl and set aside.

Step 3

Return the skillet to medium-low heat and add the remaining olive oil. Add the thinly sliced garlic and cook gently, stirring frequently, until fragrant and lightly golden, about 2-3 minutes. Be careful not to burn the garlic.
