Ingredients

  • 400 grams spaghetti (or pasta of your choice)
  • 400 grams cherry tomatoes, halved
  • 50 grams pine nuts
  • 3 tablespoons extra-virgin olive oil
  • 3 cloves garlic cloves, minced
  • 0.5 teaspoons red chili flakes (optional)
  • 20 grams fresh basil leaves, roughly chopped
  • 50 grams grated Parmesan cheese (optional, for serving)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, place a large skillet over medium heat and toast the pine nuts. Stir frequently for 2-3 minutes or until golden brown and fragrant. Transfer to a small bowl and set aside.

Step 3

In the same skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 30-60 seconds, stirring constantly, until fragrant. Be careful not to burn the garlic.
