Ingredients

  • 400 grams spaghetti (or pasta of choice)
  • 500 grams ripe cherry tomatoes
  • 4 tablespoons extra virgin olive oil
  • 3 pieces garlic cloves, minced
  • 15 grams fresh basil leaves, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 50 grams grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.

Step 2

Meanwhile, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned.

Step 3

Add the cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and begin to burst. Use the back of a spoon to gently press some of the tomatoes to release their juices.
