Ingredients

  • 400 grams Pasta (spaghetti or your choice of variety)
  • 800 grams Fresh tomatoes (preferably ripe and flavorful)
  • 4 tablespoons Extra virgin olive oil
  • 4 whole Garlic cloves
  • 10 leaves Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 50 grams Parmesan cheese (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water and then drain the pasta.

Step 2

While the pasta is cooking, prepare the fresh tomato sauce: Cut a small 'X' into the bottom of each tomato. Bring a pot of water to a boil, then blanch the tomatoes for 30 seconds. Transfer them to a bowl of ice water to cool. Peel off the skins, remove the seeds, and chop the tomatoes into small pieces.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the garlic cloves (either minced or lightly smashed) and sauté until fragrant but not browned, about 1-2 minutes.

Step 4

Add the chopped tomatoes to the skillet and cook over medium heat for 10 minutes. Stir occasionally, breaking down the tomatoes with a wooden spoon. Season with salt and black pepper.

Step 5

Once the tomato sauce has thickened slightly, add the cooked pasta to the skillet. Toss to combine, adding a splash of the reserved pasta cooking water if needed to loosen the sauce.

Remove the skillet from the heat and stir in the fresh basil leaves.
