Ingredients

  • 12 oz Pasta (spaghetti or penne)
  • 2 cups Cherry tomatoes

  • 2 cloves Garlic, minced
  • 3 tbsp Extra-virgin olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground
  • 0.25 tsp Red pepper flakes (optional)
  • 1 tsp Lemon zest
  • 0.5 cup Pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

Step 2

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften and burst. Lightly press them with the back of a spoon to release their juices.
