Ingredients

  • 400 g spaghetti or linguine
  • 4 tbsp olive oil
  • 3 large garlic cloves
  • 1 cup fresh basil leaves
  • 1 cup fresh parsley
  • 2 tsp fresh thyme leaves
  • 3 tbsp fresh chives
  • 1 cup grated Parmesan cheese
  • 1 tsp lemon zest
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

Step 2

While the pasta is cooking, finely chop the garlic and all the fresh herbs (basil, parsley, thyme, and chives) and set them aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Lower the heat and stir in the chopped herbs, lemon zest, salt, and black pepper. Cook for an additional 1-2 minutes to release the flavors.

Step 5

Add the cooked pasta to the skillet and toss it with the herb mixture. If the mixture seems dry, gradually stir in some of the reserved pasta water until you reach your desired consistency.

Step 6

Turn off the heat and sprinkle the pasta with grated Parmesan cheese. Toss everything together to coat evenly.
