Ingredients

  • 400 grams pasta (spaghetti or linguine)
  • 3 tablespoons olive oil
  • 50 grams pine nuts
  • 60 grams currants
  • 2 units garlic cloves, thinly sliced
  • 0.5 teaspoons red chili flakes
  • 2 tablespoons fresh parsley, chopped
  • 50 grams grated Parmesan cheese (optional)
  • 1 to taste salt
  • 1 to taste black pepper
  • 100 milliliters pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 100 milliliters of pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the pine nuts and toast them, stirring frequently, for 2-3 minutes until golden and fragrant. Remove the pine nuts from the skillet and set aside.

Step 3

In the same skillet, add the garlic slices and red chili flakes. Cook for 1-2 minutes until the garlic is golden and aromatic, being careful not to burn it.

Add the currants to the skillet and stir for 1 minute to plump them up slightly.

Return the cooked pasta to the skillet and toss to combine with the garlic, chili flakes, and currants. Gradually add the reserved pasta cooking water a little at a time to create a light sauce that coats the pasta.
