Ingredients

  • 100 grams Pasta (spaghetti, linguine, or any preferred type)
  • 2 tablespoons Olive oil
  • 1 clove Garlic, minced
  • 2 tablespoons Breadcrumbs
  • 30 grams Feta cheese, crumbled
  • 1 tablespoon Fresh parsley, chopped
  • 0.25 teaspoon Red pepper flakes (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Lemon zest (optional)

Directions

Step 1

Bring a medium pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1/4 cup of pasta water before draining.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a small pan over medium heat.

Step 3

Add the minced garlic to the pan and cook for 30 seconds until fragrant, being careful not to burn it.

Step 4

Stir in the breadcrumbs and toast them in the pan for 2–3 minutes, stirring frequently, until they turn golden brown and crispy. Remove the pan from heat and set aside.

Step 5

In the same pot used for cooking the pasta, add the remaining 1 tablespoon of olive oil over low heat.

Toss the cooked pasta in the pot with the olive oil. If needed, add a splash of the reserved pasta water to loosen it.
