  • 400 grams pasta (spaghetti, fettuccine, or penne)
  • 150 grams pancetta, diced
  • 200 ml heavy cream
  • 50 grams Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 to taste salt
  • 1 to taste black pepper, freshly ground
  • 1 tablespoon parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook for 5-7 minutes, stirring occasionally, until it is golden and crispy. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.

In the same skillet, add the butter and minced garlic. Cook for 1 minute until fragrant, being careful not to burn the garlic.
