Ingredients

  • 12 ounces pasta (penne, fusilli, or spaghetti)
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic cloves, minced
  • 1.5 cups frozen peas
  • 1 teaspoon crushed red pepper flakes
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

While the pasta cooks, pat the chicken breasts dry and season both sides with a pinch of salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and fully cooked (internal temperature should read 165°F). Remove from the skillet and set aside to rest. Once cooled slightly, slice into thin strips.
