  • 1 teaspoon Black pepper

  • 4 cloves Garlic
  • 1 cup Artichoke hearts (canned, drained, and quartered)
  • 1.5 cups Cherry tomatoes
  • 3 tablespoons Butter
  • 1 cup Dry white wine
  • 2 tablespoons Lemon juice
  • 12 ounces Pasta (fettuccine, penne, or your choice)
  • 0.5 cup Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Start by seasoning the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside to rest.

Step 3

While the chicken cooks, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Mince the garlic and sauté it in the skillet for 1-2 minutes, until fragrant.

Cut the cooked chicken into bite-sized strips and return it to the skillet. Toss everything together with the drained pasta, reserved pasta water, and grated Parmesan cheese. Stir well to coat the pasta evenly in the sauce.

Step 8

Transfer the pasta with chicken and artichokes to serving plates. Garnish with fresh parsley and additional Parmesan cheese if desired.
