Ingredients

  • 12 ounces pasta (such as penne or fusilli)
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 8 cups water

Directions

Step 1

Bring 8 cups of water to a boil in a large pot. Add a pinch of salt, then add the pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Step 2

In the same pot, melt 4 tablespoons of butter over medium heat. Once melted, add 2 tablespoons of flour and whisk continuously for about 1-2 minutes until the mixture is smooth and slightly golden.

Gradually whisk in 2 cups of milk, making sure there are no lumps. Continue to whisk the mixture until it starts to thicken, which should take about 5 minutes.
