Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining. Set the cooked pasta aside.
While the pasta cooks, thinly slice the yellow onion, red onion, and shallots.
In a large skillet, heat the olive oil and butter over medium heat until the butter is melted.
